Hi folks,

I thought with the "Redhots July Writing Contest" going on, and all the other creative projects here, we might need some treats to keep us going.

Please feel free to post summer or other recipes here, anything you like! I'm trying to breathe some life back into Cook's Corner!

Better Than Sex Cake

(prepare a day ahead)

1 pkg (18 1/2 oz) yellow cake mix
1 20 oz can crushed pineapple in own juice
3/4 cup sugar
2 pkgs (3 1/2 oz. each) instant vanilla pudding mix
3 cups milk
1 cup heavy whipping cream
1/4 cup confectioner's sugar (powdered)
1 tsp. vanilla extract
3/4/ cup flaked coconut, toasted

In 13 x 9 pan, bake cake according to package directions. Meanwhile, in medium saucepan, combine pineapple with its juice and sugar; cook over medium heat. Stir occasionally until thick & syrupy, about 20 minutes.

When cake is done, remove from oven and pierce top with a fork at one inch intervals. Pour on pineapple mixture and spread evenly over cake. Cool completely.

In medium bowl, combine pudding mix with milk; blend until thick. Spread over cake. In medium bowl, beat cream until soft peaks form. Add confectioner's sugar and vanilla. Continue beating until stiff. Spread over cake. Refrigerate 24 hours. Before serving, sprinkle with toasted coconut. Makes 16 servings

So, let me get this straight: "Better than Sex Cake", with "heavy whipping", from your Aunt Joyce. I never had aunts like this...

She was a redhead and my uncle's high school sweet heart! After my aunt Doris died, Uncle Ralph looked her up and they wound up getting married and retiring in Desert Hot Springs, California. He used to sing a song about how happy she made him, to the tune of "Tiny Bubbles" ... every time I hear that song now, I think of them. Both have been gone for some time, but the memories are good ones! We even had a luau one time at their house, complete with a pig roasted under the sand and hula skirts ... LOL

Thanks for this discussion, Carol! After typing in these recipes, decided to go with the chili for my upcoming bday party instead of the grilled burgers and hot dogs ... make it the day before, and then the cook doesn't have to work during the party (plus it tastes even better :)

Well, my birthday's on the 5th and that falls on a Tuesday ... party is planned for August 10th. It was supposed to be a surprise ... LOL but Cliff can't seem to keep secrets ... said people would be calling and I'd find out anyway but he always tells me stuff like that ... it seems it's impossible for him to keep a secret
