Hi folks,

I thought with the "Redhots July Writing Contest" going on, and all the other creative projects here, we might need some treats to keep us going.

Please feel free to post summer or other recipes here, anything you like! I'm trying to breathe some life back into Cook's Corner!

Here's a luscious-looking dessert I found in August's edition of Everyday with Rachael Ray. I haven't tried it yet, but will very soon.

Citrus Dream

Serves 8
Prep-20 min (plus freezing)
Cook-15 min

2 cups vanilla wafers, finely crushed
5 Tbsp butter, melted
1/2 tsp salt
6 large egg yolks
1 cup superfine sugar
1 Tbsp grated lemon peel, plus 1/4 cup lemon juice
1 Tbsp grated orange peel, plus 1/4 cup orange juice
2 cups heavy cream
Shredded coconut, toasted

1. Line a 5X9-inch loaf pan with plastic wrap, allowing a 4-inch overhang on all sides. In a small bowl, stir together the wafers, butter and salt; press evenly into the bottom of the pan and freeze.

2. In a double boiler, whisk together the egg yolks and sugar and cook, whisking, until the sugar has dissolved, about 3 minutes. Slowly whisk in the citrus peel and juice over low heat until the mixture has thickened, 10-12 minutes; let cool for 10 minutes.

3. Using an electric mixer, beat the cream until soft peaks form. Fold into the custard. Pour the filling over the crust. Fold the plastic wrap over the cake and freeze for at least 5 hours or overnight.

4. To serve, run a wet knife around the sides of the pan and invert onto a platter, discarding the plastic wrap. Sprinkle with the coconut.

"Flash" Guacamole

1 medium avocado, ripe
garlic salt
black corn chips
1 tablespoon red salsa

Peel avocado and remove seed.
Mash in small bowl with fork until smooth.
Add 4 strong shakes garlic salt. Blend.
Smooth top. Make center indentation.
Spoon salsa in center.
Serve with corn chips.
Ole!

Chic's Chili

4 # hamburger
4 tsp New Mexico chili powder
3 finger tips salt
3 finger tips pepper
2 1/2 finger tips (full) dried chili seasonings
4 full finger tips garlic powder
3 onions, chopped
2 #2 cans diced tomatoes
2 #2 cans chili beans

Brown hamburger well - breaking in little pieces - add all ingredients. Bring to full boil - turn fire down low & simmer all day or at least 4 hours.

Use only garlic powder
Use only New Mexico Chili Powder
You can find it in grocery store where the dried seasonings are.

This is a handwritten recipe from a friend's mother, word for word as she wrote it ... and it makes the best chili I have ever had.




This goes really well with it!

Marie Callendar Corn Bread

3 cups Bisquick
5 tbsp. corn meal
3/4 cup sugar
3/4 tsp. baking powder
3 large eggs
1 1/2 cup milk
1 tbsp. oleo melted (I would use butter)

Mix dry ingredients. Add eggs and liquids. Put in greased 9 x 13 pan. Bake 325 degree oven 30-40 minutes.

I originally got this one in a recipe swap and it tastes great for someone who is usually not too partial to corn bread ... sweet :)
