Hey Gang, It's time to revive this discussion! There's been lots of talk lately about chicken/love soup, cornbread, chocolate "Rollo" cookies, etc. Let's take care of each other during the months of colds and aches ahead by offering our best recipes for healing.

Come on! I know you each have one!

Here's one of my faves:

Green Chile Cornbread

2 pkg. Jiffy Cornbread mix
2 eggs
1 can (small or large - your preference) chopped green chiles (these are not hot!)
1 can creamed corn
2 cups shredded cheddar cheese

Preheat oven to 400 degrees farenheit.
Mix all ingredients in large bowl. Pour into a greased pan (size depends on how "thick" you want your bread to be.)
Bake at least 20-25 minutes, or until toothpick inserted in center comes out clean.
Cut into slices and serve warm. This bread will be moist, but make sure you bake it long enough!

I like to use a round pan and slice like pieces of pie. Squares are also nice, and can be made smaller if you're entertaining a crowd.
